Spicy Red Pepper Stir Fry
Tags:asian gluten free vegan vegetarianThis is a light but filling dish that France-Lee threw together this afternoon for lunch. It was surprisingly delicious.
Ingredients:
- 2 tsp. corn starch mixed w/1 tsp. cold water
- 1/2 cup gluten free soy sauce
- 1/8 cup red wine
- 2 tbsp. organic unprocessed sugar (or brown sugar)
- 5 cloves chopped garlic
- 1 lb. frozen bell peppers
- ground red pepper to taste
- asian hot chili sauce to taste
- white jasmine rice
- 1 tbsp. olive oil
In a small bowl, mix corn starch and water. In another small bowl, mix together the soy sauce, sugar, and red wine. In a pan, add the oil and simmer on medium. When hot, add the chopped garlic and sauté until slightly browned. Now add both sauce mixtures and the frozen bell peppers. Cook until the sauces have coagulated (about 10 minutes), then add 1/4 cup of water while stirring often. At the end, add the ground red pepper and chili sauce to taste.
Serve with (ground) cashews on top on a bed of cooked white rice.
